Smashed Sausage with Pepper & Onion Tacos
Quick, crispy, and packed with flavor—perfect for a busy weeknight dinner.
Ingredients
- 1 lb hot or sweet Italian sausage (loose, no casing)
- 1 bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- Sliced cheese (Velveeta melts great—we used it here)
- Carb Balance fajita-size flour tortillas
Instructions
- Fire up your Blackstone and get it preheated while you prep. No Blackstone? No problem. Use a large frying pan.
- Portion out about 1/8 lb of sausage and press it thin onto each tortilla—it should almost cover the whole surface.
- Sauté your peppers and onions on the side until they’re soft and caramelized. I let them go low and slow while the tacos are cooking.
- Place the tortillas meat side down on the griddle and let them go for about 8–10 minutes, depending on your heat. You’re looking for the meat to crisp up and get golden brown.
- Once the sausage is cooked through and crispy, flip the tacos, kill the heat, and lay down a slice of cheese. Top each one with a pile of those caramelized peppers and onions.
- I use the Blackstone taco holder to serve these—makes it easy and keeps everything in place.
Notes & Tips
This one’s on regular rotation at our house. It comes together fast and tastes like something you’d order out. Great for weeknights when time’s tight but you still want something hot, cheesy, and satisfying.
