Chicken & Broccoli Soba Noodle Dinner
Fast, flavorful, and loaded with clean ingredients—this one hits all the marks for a solid weeknight dinner. Made this on my Blackstone, but you can use a large skillet or wok if you’re cooking indoors.
Ingredients
- 1½ lbs boneless, skinless chicken breast, sliced thin
- 3 cups fresh broccoli florets
- 2 tablespoons low-sodium soy sauce (for marinade)
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil (or any neutral oil you have)
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 2 tablespoons low-sodium soy sauce (for cooking)
- 1 tablespoon oyster sauce (optional but adds depth)
- 8 oz soba noodles, cooked and cooled
- Salt and pepper to taste
- Optional: sliced scallions and sesame seeds for garnish
Instructions
- Marinate sliced chicken with 2 tablespoons soy sauce and cornstarch. Set aside while prepping the rest.
- Cook soba noodles per package directions. Rinse with cold water and set aside.
- Lightly steam broccoli until just tender but still bright green. Drain and set aside.
- Fire up your Blackstone and get it hot. Add sesame oil and sauté garlic and ginger until they’re fragrant.
- Add the chicken and cook until browned and fully cooked through—about 6–8 minutes depending on your heat.
- Toss on the broccoli and soba noodles. Add remaining soy sauce and oyster sauce (if using). Stir everything together to heat through and coat well.
- Finish with scallions and sesame seeds if you’re feeling fancy. Serve it up hot!
Serving Ideas
Quick Cucumber Salad: Thinly sliced cucumbers tossed with rice vinegar, a pinch of sugar, and sesame seeds. Cool and crunchy every time.
Miso Soup: A light, cozy side you can grab pre-made or make fresh. Goes great with this meal.
