Blackstone (or Skillet) Cajun Shrimp & Veggie Skillet (Serves 4)

Looking for a fast, flavorful dinner packed with bold Cajun flavor? This easy Cajun shrimp and veggie skillet recipe is a weeknight favorite. Whether you’re cooking on a Blackstone griddle or using a stovetop skillet, this shrimp dinner comes together in under 30 minutes. Perfect for busy families craving a healthy, high-protein meal.

Main: Cajun Shrimp & Veggie Skillet

Ingredients:

  • 1.5 lbs 21/25 raw shrimp, peeled and deveined (tail on or off)
  • 1 zucchini, halved and sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • ½ red onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or avocado oil
  • 1 tbsp Cajun seasoning (plus more to taste)
  • Salt and black pepper, to taste
  • Fresh lemon wedges, for finishing
  • Optional: chopped parsley for garnish

Instructions:

  1. Pat shrimp dry with paper towels. Toss with 1/2 tablespoon of oil, Cajun seasoning, and a pinch of salt.
  2. Preheat your Blackstone griddle or large skillet over medium-high heat. Add the remaining oil and throw on all the sliced veggies and garlic.
  3. Cook the veggies for about 6–8 minutes, stirring occasionally, until they soften and start to char.
  4. Slide the veggies to one side of the griddle or push them to the edges of your skillet. Add the shrimp to the hot center and cook for 2–3 minutes per side, until opaque and just crisp on the edges.
  5. Toss everything together, hit it with a squeeze of fresh lemon, and garnish with parsley if you’re feeling fancy. Serve it hot.

Sides We Love With This Cajun Shrimp Skillet

1. Garlic Butter Rice

Cook up a batch of white or brown rice and stir in some melted butter, garlic powder, and a pinch of salt. Finish with chopped parsley if you’re into that. The kids loved this, but my wife and I agreed it could be optional.

2. Simple Avocado, Cucumber & Tomato Salad

Toss chopped cucumber, avocado, and tomato with lime juice, olive oil, and a sprinkle of Tajín or chili-lime seasoning. Fresh, simple, and a perfect contrast to the Cajun heat.

3. Healthy Street Corn (Off the Cob)

Char some corn on the Blackstone or stovetop skillet, slice it off the cob, and toss with Greek yogurt, cotija cheese, lime juice, and a dash of chili powder. It’s like summer in a bowl and a little lighter without the mayo.


Recipe Notes:

  • This one came together fast even after working late. Big hit at our house.
  • Next time I’ll skip the rice and go with quinoa instead — just to keep it lighter. But the rice got devoured by the kids.
