Italian Tomato Salad
This is a staple in our house, especially during the summer when the tomatoes are going strong in the garden. I made this today for the family and served it alongside grilled burgers. I scored some really good tomatoes and garlic from a local farm stand, and it brought this dish to the next level.
Ingredients:
- 5 tomatoes, cut up
- 4-5 cloves garlic, sliced in half
- 2 tablespoons kosher salt
- 1 tablespoon oregano
- 2 teaspoons fresh black pepper
- ½ cup olive oil
Instructions:
- Cut the tomatoes and halve the garlic, placing both into a shallow serving dish.
- Sprinkle with kosher salt, black pepper, and oregano.
- Let everything sit at room temperature for at least 30 minutes. You’ll start to see the juices release and combine with the seasonings.
- Once there’s a good amount of juice in the dish, pour in the olive oil and gently mix.
- Let it sit on your counter or table until ready to serve.
- Serve with fresh Italian bread to soak up all those amazing juices.
