Greek-Style Chicken Dinner

This was a huge hit in the house tonight! With a little prep earlier in the day, this dinner came together quick — perfect for a hot summer night when no one wants to be stuck in the kitchen too long.

We grilled up lemony, herb-seasoned chicken legs, roasted red potatoes with garlic and oregano, and served it all with a crisp cucumber, tomato, and bell pepper salad. Grilled Lemon-Oregano Chicken Legs

Ingredients

  • 8 chicken drumsticks
  • Juice & zest of 2 lemons
  • ¼ cup olive oil
  • 2 tsp dried oregano
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp kosher salt
  • ½ tsp black pepper

Instructions

  1. Pat chicken legs dry.
  2. Toss with lemon juice, zest, olive oil, oregano, garlic powder, paprika, salt, and pepper.
  3. Heat your grill to 375–400°F.
  4. Grill 40–50 minutes, turning a few times, until internal temp reaches 180–185°F.
  5. Rest for 10 minutes before serving.

Herbed Garlic Roasted Red Potatoes

Ingredients

  • 2 lbs red potatoes, halved or quartered
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)

Instructions

  1. Parboil potatoes ~7 minutes until just tender. Drain and steam dry.
  2. Toss with olive oil, minced garlic, oregano, garlic powder, salt, pepper, and paprika.
  3. Roast in a cast iron skillet or foil pan on the grill at 375–400°F for 30–40 minutes, stirring once or twice, until golden and crispy.

Fresh Cucumber, Tomato & Bell Pepper Salad

Ingredients

  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1 green bell pepper, diced
  • 1 small shallot, finely diced
  • 2 cloves garlic, grated
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • ½ tsp black pepper

Instructions

  1. Combine cucumber, cherry tomatoes, bell pepper, shallot, and garlic in a large bowl.
  2. Drizzle with olive oil and season with oregano, salt, and pepper.
  3. Toss gently and chill until ready to serve.
