Smashed Cajun Ranch Chicken Tacos
This one was a huge hit with the family! With a little prep, these tacos came together quick and disappeared even quicker. Perfect for a hot summer night, this recipe made 8 tacos — and not a single one was left.
Ingredients
- 1 lb ground chicken
- 2 tbsp ranch seasoning
- 2 tbsp Cajun seasoning
- 8 Carb Balance tortillas
- 1 red onion, sliced and sautéed
- 6 slices applewood bacon, cooked and chopped
- 1 large head romaine lettuce, chopped
- 1 cucumber, quartered
- 3 carrots, chopped
- Litehouse Homestyle Ranch dressing (about 6 tbsp)
- Olive oil for cooking
- Sriracha (optional, for a spicy kick)
Instructions
- In a bowl, mix ground chicken with ranch and Cajun seasonings.
- Spread a thin layer of the seasoned chicken mixture onto each tortilla.
- Heat a Blackstone griddle or large skillet to medium heat, drizzle lightly with olive oil, and cook tortillas chicken-side down for about 6–7 minutes.
- Flip and cook another 5 minutes until the chicken is cooked through (internal temp 165°F).
- While the tortillas are cooking, sauté the red onion until softened.
- Prepare the salad by combining romaine, cucumber, carrots, and red onion. Toss lightly with ranch dressing.
- Assemble tacos: top each with sautéed onion, dressed salad, and chopped bacon. Drizzle a little extra ranch and Sriracha if desired.
- Serve hot — these won’t last long!
