🔥 Carnitas BBQ Flatbread (Aldi Edition)
A crispy, cheesy flatbread loaded with leftover Aldi carnitas, red onion, and BBQ sauce. An easy way to turn slow-cooked pork into a quick weeknight dinner, game-day snack, or lunch.
🧂 Ingredients (Serves 4)
- 1 flatbread (Aldi Mama Cozzi or similar)
- 1–1½ cups leftover Aldi carnitas pork, shredded
- 1/2 cup shredded mozzarella cheese
- 1/4 cup shredded cheddar cheese (optional, for extra melt)
- 1/4 cup red onion, thinly sliced
- 3–4 Tbsp BBQ sauce (Aldi Burman’s works great)
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- Avocado oil spray or a light drizzle of olive oil
🍳 Instructions
- Preheat: Heat oven to 425°F. Place flatbread on a parchment-lined sheet pan and lightly spray or brush with avocado oil.
- Season the carnitas: Toss the shredded carnitas with garlic powder and black pepper to wake up the flavor.
- Build the flatbread: Spread a thin layer of BBQ sauce over the flatbread. Add the seasoned carnitas in an even layer, then scatter the sliced red onion over the top. Finish with mozzarella and cheddar.
- Bake: Bake for 10–12 minutes, or until the cheese is melted and bubbling and the edges are crisp and lightly golden.
- Finish & serve: Drizzle with a little extra BBQ sauce as soon as it comes out of the oven. Let rest for 2 minutes, then slice and serve.
