Juicy, sliceable chicken breast cooked low and slow with the sous vide, then chilled and sliced deli-style for sandwiches, wraps, and quick lunches through the week.

It’s clean, high in protein, family-approved, and a great alternative to store-bought lunch meat when you want something simple without the extras.

I made this two ways — a porketta-style version and a more classic oven-roasted style — so you get variety without doing a separate cook.

Ingredients

Chicken

  • 2–3 lbs boneless, skinless chicken breast

Instructions

1) Prep

  1. Pat chicken dry.
  2. Season lightly (flavor intensifies during sous vide).
  3. Place into vacuum seal bags (split flavors if desired).

2) Sous Vide Cook

  1. Place bags in water bath.
  2. Set to 145°F.
  3. Cook for 2 hours.

3) Ice Bath

  1. Transfer immediately to ice water.
  2. Chill for 10–15 minutes.

4) Store

  1. Refrigerate sealed bags up to 5–7 days.

5) Slice

  1. Chill fully before slicing.
  2. Slice against the grain.
  3. Slice thin for sandwiches or thicker for wraps.
