Baked Italian Sausage, Peppers & Onions
Budget-friendly comfort food at its best
Ingredients:
- 1 family pack of Italian sausage (sweet or hot)
- 2 bell peppers, sliced
- 1 white onion, sliced
- 3 cloves garlic, minced
- Olive oil
- Italian seasoning
- Salt and pepper, to taste
Instructions:
Preheat your oven or toaster oven to 375°F. (If your toaster oven can handle a 16×9 Pyrex, you’re good to go.)
Slice up your peppers and onions and toss them into a 16×9 Pyrex or large baking dish. Sprinkle in the minced garlic, season with Italian seasoning, salt, and pepper, then drizzle generously with olive oil. Give everything a good mix so it’s all coated and seasoned.
Lay your sausage links right on top of the pepper and onion mix—no need to pre-cook. Slide it into the oven and bake for about 30 minutes. Flip the sausages over and bake another 30–45 minutes or until they’re nicely browned and cooked through. You’re looking for an internal temp of 160°F on the sausage.
