Chuck Roast Stew Over Mashed Potatoes
Fork-tender chuck roast simmered low and slow in red wine, beef broth, and fresh herbs, ladled over creamy mashed potatoes. Finished with garlicky green beans tossed in breadcrumbs and Locatelli. Cozy, hearty, and pure comfort.
Ingredients
For the Stew
- 3 lb chuck roast, trimmed and cut into large chunks
- Kosher salt & coarse black pepper (generous, for seasoning)
- 1/4 cup all-purpose flour (light dredge)
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 cup red wine
- 3 1/2 cups beef broth (homemade or low-sodium)
- 1 medium onion, sliced
- 5 carrots, peeled & cut into large pieces
- 3 celery stalks, cut into 2-inch pieces
- 3 cloves garlic, smashed
- 2 bay leaves
- Fresh herb bundle (tied): rosemary, thyme, oregano
For Serving
- Creamy mashed potatoes
- Fresh green beans tossed with olive oil, minced garlic, toasted breadcrumbs, and grated Locatelli Pecorino Romano
Instructions
- Sear the beef: Pat roast dry and season generously with kosher salt and coarse black pepper. Dredge lightly in flour, shaking off excess. Heat olive oil in a Dutch oven over medium-high and sear beef on all sides until deeply browned. Remove to a plate.
- Build the base: In the same pot add onion, carrots, and celery. Sauté ~5 minutes until softened and lightly caramelized. Stir in garlic for 30 seconds. Deglaze with red wine vinegar and red wine, scraping up browned bits.
- Simmer low & slow: Add beef broth, bay leaves, and the tied herb bundle. Return beef (and any juices) to the pot. Cover and simmer gently for 2 1/2–3 hours, until fork-tender. Remove herb bundle and bay leaves; adjust salt/pepper.
- Serve: Spoon mashed potatoes into bowls, ladle stew and gravy over top. Plate with garlicky green beans finished with breadcrumbs and Locatelli.
Chef’s Notes
- The herb bundle perfumes the stew without stray stems—just pull it out at the end.
- Wine adds depth; sub extra broth if you prefer alcohol-free.
