Crispy Smoked Turkey Wings + Honey BBQ Glaze

Smoked Turkey Wings

Ingredients:

  • 1 dozen fresh turkey wings
  • Meat Church Honey Hog BBQ rub
  • 1 tsp baking powder (optional, helps with crispy skin)
  • 1–2 tbsp neutral oil (avocado or canola)

Instructions:

  1. Pat wings completely dry with paper towels. For best results, dry-brine uncovered in the fridge overnight.
  2. Toss wings in oil, then coat evenly with BBQ rub and baking powder.
  3. Preheat smoker to 275–300°F. Add cherry or hickory wood for smoke flavor.
  4. Smoke wings for 1.5–2 hours until internal temp reaches 175–185°F.
  5. To crisp the skin, finish wings at 375–400°F for 15–20 minutes, or sear them on a hot grill or under the broiler for 2–3 minutes per side.

Honey BBQ Glaze

Ingredients:

  • 1/2 cup BBQ sauce (your favorite)
  • 1/4 cup honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp butter
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Optional: 1/2–1 tsp hot sauce or cayenne for heat

Instructions:

  1. Combine all glaze ingredients in a small saucepan over medium heat.
  2. Simmer for 3–5 minutes, stirring occasionally, until slightly thickened and glossy.
  3. Brush glaze on wings during the last 10–15 minutes of cooking.
  4. For extra caramelization, give the wings a final broil or flame-sear after glazing.
