Greek-Style Chicken Dinner
This was a huge hit in the house tonight! With a little prep earlier in the day, this dinner came together quick — perfect for a hot summer night when no one wants to be stuck in the kitchen too long.
We grilled up lemony, herb-seasoned chicken legs, roasted red potatoes with garlic and oregano, and served it all with a crisp cucumber, tomato, and bell pepper salad. Grilled Lemon-Oregano Chicken Legs
Ingredients
- 8 chicken drumsticks
- Juice & zest of 2 lemons
- ¼ cup olive oil
- 2 tsp dried oregano
- 2 tsp garlic powder
- 1 tsp paprika
- 1 tsp kosher salt
- ½ tsp black pepper
Instructions
- Pat chicken legs dry.
- Toss with lemon juice, zest, olive oil, oregano, garlic powder, paprika, salt, and pepper.
- Heat your grill to 375–400°F.
- Grill 40–50 minutes, turning a few times, until internal temp reaches 180–185°F.
- Rest for 10 minutes before serving.
Herbed Garlic Roasted Red Potatoes
Ingredients
- 2 lbs red potatoes, halved or quartered
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp kosher salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
Instructions
- Parboil potatoes ~7 minutes until just tender. Drain and steam dry.
- Toss with olive oil, minced garlic, oregano, garlic powder, salt, pepper, and paprika.
- Roast in a cast iron skillet or foil pan on the grill at 375–400°F for 30–40 minutes, stirring once or twice, until golden and crispy.
Fresh Cucumber, Tomato & Bell Pepper Salad
Ingredients
- 1 English cucumber, diced
- 1 pint cherry tomatoes, halved
- 1 green bell pepper, diced
- 1 small shallot, finely diced
- 2 cloves garlic, grated
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp kosher salt
- ½ tsp black pepper
Instructions
- Combine cucumber, cherry tomatoes, bell pepper, shallot, and garlic in a large bowl.
- Drizzle with olive oil and season with oregano, salt, and pepper.
- Toss gently and chill until ready to serve.
