Grilled Chicken Tenders with Charred Broccolini & Rice Pilaf
This one came together fast and the family crushed it — juicy grilled chicken, smoky broccolini, and a buttery rice pilaf. Simple, fresh, weeknight-friendly.
Ingredients (Serves 4)
Chicken
- 1 lb chicken tenders
- 1½ Tbsp Kinder’s Cowboy Butter seasoning
Broccolini
- 1 bunch broccolini, cleaned & trimmed
- 1 Tbsp avocado oil
- 1 tsp house seasoning (salt, pepper, onion powder, garlic powder)
Rice Pilaf
- 1½ cups RiceSelect Royal Blend
- 3 Tbsp unsalted butter
- 2½ cups chicken stock
- 1 tsp house seasoning
Instructions
1) Grill the Chicken
- Pat chicken dry and rub all over with Cowboy Butter seasoning.
- Grill over medium-high heat 3–4 minutes per side (internal temp 165°F). Rest 5 minutes.
2) Char the Broccolini
- Toss broccolini with avocado oil and house seasoning.
- Grill 5–7 minutes, turning, until tender with light char.
3) Make the Rice Pilaf
- Melt butter in a saucepan over medium; add rice and toast 2–3 minutes, stirring.
- Stir in chicken stock and house seasoning. Bring to a boil, reduce to low, cover, and simmer ~15 minutes.
- Rest 5 minutes off heat, then fluff with a fork.
