Grilled Sausage with Peppers & Onions

π Ingredients
- 1 family pack of hot Italian sausage (approx. 5β6 links)
- 3 bell peppers (1 each: red, yellow, orange), sliced
- 3 large white onions, sliced (subbed 1 red onion this time)
- 4 cloves garlic, minced
- 1 cup Pinot Grigio (or other dry white wine)
- 1/4 cup olive oil
- Italian club rolls, for serving
- Chips & pickles, for the full plate
π Instructions
- Grill the peppers: Preheat a Lodge grill pan over medium-high heat. Cook sliced peppers until charred and tender. Transfer to a foil or disposable pan to keep warm.
- SautΓ© the onions: Add sliced onions to the grill pan and cook until browned and caramelized. Stir in minced garlic.
- Deglaze: Pour in the white wine and olive oil. Stir to combine and simmer for a couple of minutes. Return the peppers to the pan and mix well.
- Grill the sausage: While the veggies simmer, grill sausages directly on the grates or another grill pan until internal temp reaches 160Β°F.
- Simmer it together: Add sausages into the pan with the pepper and onion mixture. Let everything simmer together on the grill for 10β15 minutes so the flavors meld.
- Serve: Pile the sausage and veggies into club rolls and plate with a handful of chips and a pickle. Dinnerβs done!
