Caesar Salad Dressing (Single Batch)

Homemade and holiday-approved — this is a creamy, flavorful Caesar dressing that delivers every time.

Ingredients:

  • 1 cup olive oil
  • 3 eggs
  • 2 large garlic cloves
  • 1 can anchovies (oil included)
  • ½ lemon, juiced
  • 1 tbsp vinegar
  • ¼ tsp dried mustard
  • 2 tbsp Locatelli cheese
  • 3 dashes Worcestershire sauce

Instructions:

  1. Add all ingredients to a large mixing bowl.
  2. Use an immersion blender to blend everything together until the dressing is thick and creamy.
  3. Store chilled in the fridge until ready to use. This dressing keeps well for up to 3 days.

Notes & Serving Tips:

This dressing is a go-to for holidays—and plenty of dinners in between. I usually triple the batch when serving a crowd.

Serve with hand-ripped romaine, lightly dressed and tossed. Top it off with black olives, crunchy croutons, sharp provolone, a few extra anchovies, more Locatelli cheese, and a generous grind of fresh black pepper.
