Italian Tomato Salad

This is a staple in our house, especially during the summer when the tomatoes are going strong in the garden. I made this today for the family and served it alongside grilled burgers. I scored some really good tomatoes and garlic from a local farm stand, and it brought this dish to the next level.

Ingredients:

  • 5 tomatoes, cut up
  • 4-5 cloves garlic, sliced in half
  • 2 tablespoons kosher salt
  • 1 tablespoon oregano
  • 2 teaspoons fresh black pepper
  • ½ cup olive oil

Instructions:

  1. Cut the tomatoes and halve the garlic, placing both into a shallow serving dish.
  2. Sprinkle with kosher salt, black pepper, and oregano.
  3. Let everything sit at room temperature for at least 30 minutes. You’ll start to see the juices release and combine with the seasonings.
  4. Once there’s a good amount of juice in the dish, pour in the olive oil and gently mix.
  5. Let it sit on your counter or table until ready to serve.
  6. Serve with fresh Italian bread to soak up all those amazing juices.
