Shrimp Tacos on the Blackstone with Healthy Sides (Serves 4)

Main Dish: Shrimp Tacos

Ingredients:

  • 2 lbs 16/20 shrimp (peeled & deveined)
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • Juice of 1 lime
  • 8–12 small corn or low-carb tortillas
  • Optional toppings: diced avocado, shredded cabbage, fresh cilantro, Greek yogurt or light crema

Instructions:

  1. Preheat the Blackstone griddle to medium-high heat.
  2. In a bowl, combine shrimp, olive oil, lime juice, and all spices. Toss to coat evenly.
  3. Place shrimp directly on the hot griddle. Cook 2–3 minutes per side until pink and slightly charred.
  4. Warm tortillas on the side of the griddle.
  5. Assemble tacos with shrimp and your choice of healthy toppings.

Healthy Side 1: Grilled Corn Salad (Elote-Inspired, Off the Cob)

Ingredients:

  • 4–5 ears of corn, husked
  • 2 tbsp plain Greek yogurt
  • 1 tbsp lime juice
  • 1/4 tsp chili powder
  • 2 tbsp Cotija or feta cheese, crumbled
  • Chopped cilantro (optional)

Instructions:

  1. Grill corn on the Blackstone until lightly charred on all sides.
  2. Cut kernels off the cob and place into a bowl.
  3. Mix with yogurt, lime juice, chili powder, and cheese. Add cilantro if desired.

Healthy Side 2: Black Bean & Cucumber Salad

Ingredients:

  • 1 can black beans (drained and rinsed)
  • 1 cucumber, diced
  • 1 small red bell pepper, chopped
  • 1/4 red onion, finely chopped
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1/2 tsp cumin
  • Salt to taste
  • Chopped cilantro (optional)

Instructions:

  1. Combine beans, cucumber, bell pepper, and onion in a bowl.
  2. Drizzle with olive oil and lime juice. Sprinkle in cumin and salt.
  3. Toss well and add cilantro if using.

Notes:

  • All sides can be made ahead and chilled.
  • To keep tacos low-calorie, opt for lettuce wraps or almond flour tortillas.
  • Swap shrimp for grilled chicken or tofu for variety.
This meal was a big hit with my family! It came together quickly thanks to some prep work I did the night before and earlier in the day. Both of my kids loved it, and the leftovers made for an easy and delicious lunch the next day. I enjoy experimenting with different flavors and dishes from around the world — some are trial and error, but this one was definitely a win.
